Le Syndicat in République. All French spirits only. Bartenders who know their shit about Armagnac and Calvados. €12-15 cocktails that are worth it. No reservations, just show up before 8pm at Place de la République.

Candelaria in Le Marais on Rue de Saintonge. Looks like a taco joint but there's a proper speakeasy through the back door. Mezcal-focused. Cash only. Gets busy after 10pm when Bastille crowd arrives.

Glass in Pigalle near Moulin Rouge. Tiny spot, maybe 20 seats total. Bartender changes the menu weekly based on what's good at Marché des Enfants Rouges. Weird combinations that actually work.
