Hemingway Bar (Karolíny Světlé 26, Old Town). Hidden entrance through courtyard. Proper cocktails made by actual bartenders who know absinthe history. No tourist bullshit.

Anonymous Bar (Michalská 12, Old Town). Basement speakeasy vibes without trying too hard. Good gin selection focusing on Czech botanicals. Locals from nearby law offices drink there after work.

Both require ringing doorbell for entry. Avoid anything in Wenceslas Square calling itself a 'beer hall' unless you want drunk British stag parties screaming football chants.
