Saphan Taksin pier has incredible street musicians every evening around 6-8pm. There's this saxophone player who does jazz standards that'll stop you in your tracks. Also a rotating cast of traditional Thai musicians and some surprisingly good indie acts. Performances are informal but the talent level is high. Tip what you can - these guys are pros, not just buskers. The acoustics under the pier overhang actually work really well.
